  • 1/4 cup brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the vanilla extract and egg, mixing until well combined.
  3. Stir in the grated zucchini, ensuring it’s evenly distributed.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
